Man and animals are challenged constantly by pathogens that influence health and wellbeing. In order to cope with these challenges, a number of defence mechanisms have evolved, which include the physical lining of the intestinal wall and functional barriers able to defend against, and to recognise and eliminate, potential pathogens, thus preventing invasion and colonisation. The numerous bacterial populations that reside in the gastrointestinal tract provide a frontline mechanism of host defence.
