Abstract

Dairy products such as butter, cheese, milk, yoghurt and cream comprise a considerable part of the Western diet, but
the health effects of these foods are unclear. Dairy fat is largely saturated, and a high intake of saturated fat is an
established risk factor for CVD and type II diabetes.
