Abstract

Vitamin A (retinol) is obtained from the diet mainly as plant carotenoid pigments, primarily b-carotene. Unlike
animals, plants do not contain vitamin A, but many dark green or dark yellow plants contain carotenoids such as bcarotene,
which serve as provitamins that are converted within the intestinal mucosa to retinol during absorption.
