Frozen Beef Protein Nutrition Analysis and Development of International Logistics Trade
The frozen beef storage method can delay protein denaturation, reduce the rate of muscle contraction and ice crystal growth, and delay the transition of water to free water, thereby reducing the protein content of beef and water loss, and reducing nutrient loss. This article analyzes the nutritional loss of frozen beef protein and the development of international logistics and trade. Studies have proved that the sub-freezing storage method can effectively maintain the protein hydration capacity of beef, maintain the integrity of beef muscle fibers, slow down the transition of difficult water to free water during storage, and better protect the quality of beef and achieve long-term storage purpose.
