Abstract

Pork bone is rich in nutrition and is a high-quality and cheap natural resource. It contains all the amino acids that make up the protein, and the amino acid ratio is balanced, which is a high-quality protein. It is also rich in taste substances, mainly taste amino acids, peptides and nucleotides. This study analyzes the nutrition of porcine bone hydrolysate, explores its effect on athletes' body function, and has important significance for popularizing intermittent hypoxic training methods and providing theoretical and experimental basis for competitive sports. Experimental statistics show that hypoxic training will significantly increase the total distance of athletes' running tests (starting speed is 0, linearly increasing at 1km per minute until the athlete's heart rate reaches 180 beats / min or more) 10% The absolute and relative values of maximal oxygen uptake in the group increased significantly by 7.0% and 8.1% (p <0.001). The results show that high-intensity intermittent training under simulated hypoxic conditions is an effective training method to improve the level of aerobic metabolism of basketball players. In the pork bone hydrolysis experiment, the enzymatic hydrolysis method had the highest mineral content such as Ca, Zn, and Fe.
