Dietary fat intake is one of the major modifiable risk factors implicated in the causation of CHD. The influence of dietary fatty acid chain length, degree of unsaturation and geometry of double bonds (cis and trans) on the atherosclerotic and thrombotic pathways that lead to CHD are well documented.
